1 packages active dry yeast
1 1/2 cups warm water
1 1/2 cups flour
1 tablespoon sugar
In a large glass of crockery bowl dissolve yeast in water. Gradually mix in flour and sugar. Lightly cover. Allow mixture to sit in a warm, draft free place for 4-7 days. Stir a couple of times each day.
When starter is bubbly and has developed a tart, acrid odor, refrigerate in a loosely-covered container until ready to use. Herman must now be stirred daily.
On the fifth day feed Herman Starter by mixing with 1 cup milk, 1 cup flour, and 1/2 cup sugar. Blend thoroughly, cover, refrigerate and continue stirring daily.
On the tenth day, you will have about 4 cups of Herman Starter. Since you've been feeding him, it's time for him to feed you. Use 1 or 2 cups in your favorite Herman recipe.
